La Mamounia has five restaurants including Le Marocain, which serves traditional Moroccan cuisine. We started our dinner with 12 different salad appetizers including Batinjaan, an eggplant salad, which were all served on a low round table. We then moved on to a pigeon pie (pastilla or b'stilla), kebabs, and a stew cooked in a tagine (also spelled tajine). The b'stilla was flavored with cinnamon and had a sweet taste. A tajine can have almost any meat or fish in it, and it is important to note that a true tagine has no flour, butter or cream. The Moroccan national dish--couscous, which is made from semolina, was an important part of the dinner. Dessert was fresh orange slices sprinkled with cinnamon, accompanied by delicious pastries. A marvelous mint tea was a perfect ending for our Moroccan dinner. Ronnie and the other men in our group also thought the belly dancer was a perfect addition to the dinner! We all agreed that the Andalucian band music was a little too much for all of us, and not very conducive to dinner conversation, although it did make us feel like we were really in Morocco.
